Stuffed Roast Leg of Lamb

Thyme Roasted Potatoes
2-3 lbs. small potatoes
3-4 tbsp. olive oil
2 tbsp. dry thyme or 1/2 c. chopped fresh thyme
salt
black pepper1- Cut potatoes into quarters
2-Place olive oil in pan
3-Add potaoes
4-Sprinkle thyme, salt and pepper over potatoes and mix.
5- Roast potatoes in oven at 400 F for about 25 min. or until done taking care to mix after first 12 minutes.
